Lately I've been having this same bowl of oatmeal every day for breakfast. It's deliciously packed with fiber, some protein, and healthy fats to keep you full. Plus, it's low in added sugar, and it's a delicious way to get some fruit into your life!
I'm no fitness expert, but in my humble opinion, this recipe is great for pre- or post-workout. You get your carbs, you get your protein, and it's satisfying and hearty. Lately my routine has been to work out first thing in the morning, right after I wake up. And I always look forward to eating this oatmeal afterward.
Now without further ado, here's the recipe!
Cook a med-large bowl of oatmeal plain. I cook mine with water and a sprinkle of salt in the microwave for 2 mins.
Add one small apple, chopped into smallish pieces, to the top of your bowl of cooked oatmeal.
If you so desire, add additional fruit toppings such as raisins or banana.
Sprinkle with some cinnamon...
...and a good amount of sweetened shredded coconut.
Stir.
Dollop on a spoonful or two of organic natural peanut butter.
Enjoy!!
